Having previously worked at the Mortlach Distillery where he was employed as a clerk and then a manager. This is where he learned the distilling trade and was quick to catch on to how successful you could become. David Stewart the Balvenie Malt Master is one of the industries most d whisky experts. David created the process wood finishing and changed the industry and the the flavour of whisky. Craftspeople have worked at this distillery for over centuries and they all have great stories. The Balvenie Stories editions are about these stories and tell them in a way that your palate can understand them. You are taken to a part of this distilleries history and share a memorable moment that made the whisky so desirable across the world. This edition of The Balvenie Stories focuses on a conversation with former Distillery Manager, Ian Millar as he remembers the first ever Week of Peat in 2002. The Balvenie and peat is not something we connect with in the whisky industry so this was a rarity. Ian Millar ordered a batch of Speyside peat for the kiln and the rest is history. For only one week in 2002 the distillery produced peated malt to create a unique whisky for all. A creation of a whisky full of vanilla notes, citrus and honey sweetness and a layer of delicate smoke. Our Tasting Notes Nose: Floral with creamy butterscotch, honey sweetness and gentle sweet peat notes. Taste: Smooth and delicious with peat smoke, citrus, vanilla and honey blossom.
